Where grain was once stored, our wines now mature in silence, with controlled humidity and temperature, until they reach their best expression – each according to its origin and ageing process.

Wines from Cádiz – Kilometre zero

Local wines first, especially when the quality is this high. In the past two decades, the province has revived its Roman-era winemaking tradition. With Atlantic humidity, the sierra’s altitude, and Jerez’s dryness, Cádiz produces unique wines to suit all tastes.

Do you want generous? Try Palomino at its best: finos from Jerez, manzanilla pasada en rama from Xixarito or the intense Pedro Ximénez from raisined grapes.

Red or white? From El Palmar (Vejer), Sancha Pérez blends varieties like Petit Verdot, Tempranillo, Merlot, and Sauvignon Blanc. In the Sierra, Ibargüen offers bold Syrah, and Bodegas Carvajal brings elegance with their Cobijado.

Looking for something different? Alumbra, 100% Malbec, is gaining attention for how well it adapts to this region.

A rosé? Try Etú (Vejer), Oceánidas, or Forlong from El Puerto.

Spain – Land of Wine

With more than 4,800 wineries, 65,000 wines, and 15% of the world’s vineyards, Spain leads in global exports. Choosing just 120 wines for our list has been quite the challenge!

At El Jardín del Califa, we offer a diverse and accessible wine list that mixes familiar names with hidden gems. From Ronda, Schatz and Payoya Negra. From Toro, the intense Almirez. Refugallo from Ribeira Sacra, Sexto Elemento (100% Bobal) from Valencia. In whites: the unique Treixadura from Refu, the elegance of Caraballas, the freshness of Txakolis and the vey special Albariño Pazo de Rubianes.

Sparkling? Try Botani (Muscat of Alexandria) or the organic cava Masia Salat. Rosé? Juvé & Camps. Something lighter? We’ve got frizzantes and semi-sweet wines too.

And of course, Rioja and Ribera del Duero – pillars of Spain’s wine prestige.

Lebanese Reds – Ancient Origins, Modern Soul

Four thousand years ago, the Phoenicians introduced the first vines to the Mediterranean. Centuries later, Jesuits refined cultivation, raising Lebanese wine to international standards.

At El Jardín del Califa, we couldn’t go without them. We’ve selected Lebanese wines with exceptional blends, combining French varieties like Cabernet Sauvignon, Cinsault, or Syrah with native grapes like Mourvèdre or Merwah – creating complex, aromatic wines with a strong identity.

Recommendations for Every Occasion

Our wine expert Ramón Fenoll recommends a few choices from our extensive list:

Aperitif
Choose a classic like Tío Pepe, the elegant manzanilla Pasada en Rama from Xixarito, or a Palo Cortado. If you prefer beer, we have everything from light brews to barrel-aged craft options from Osborne. Notable vermouths include Izaguirre and Rofes (Reus), or local favourites like La Copa and Duque de Diano.

Light starters
Perfect with young reds like Cortijo de Jara, Viña Marro, or Ébano 6. Or pair with fresh whites like Dos Claveles, Neno, or Botani. Rosé or cava? Ideal to shake things up.

Main courses
For tagines, couscous, or meats: Barbazul, Garum, La Encina del Inglés, Emilio Moro, or Marqués de Legarda Reserva.
For fish, pastelas, or lighter dishes: whites like Botani, Enate, Domine, or Fabio Montano. Rosé is also a great option.

Desserts
Finish with a Cream sherry, a Pedro Ximénez, or our artisanal orange liqueur.
